Barbajada appeared in the middle of the 19th century thanks to the ordinary waiter Domenico Barbaja. The drink quickly became popular among the high society of Milan and made Domenico rich. Barbaja opened the door to a new life – he became a theatre manager and the owner of a prestigious cafe in front of the Teatro alla Scala. The cafe was beloved by the upper crust, and one of the reasons for that was the great taste of Barbajada.
The recipe for the drink is simple enough to make it at home. For 4 cups, mix 25 g of cocoa powder and 55 g of sugar. Pour the mixture into 355 ml of hot milk and add 160 ml of ristretto made from Porto Rosso Ristretto. Whisk the mixture quickly to a foam state. Serve in heated cups, decorated with whipped cream.
